Smoky Bean Hash

Getting back into a routine after the summer holidays can be tough. Here's a quick, easy and delicious recipe for smoky beans that everyone will love and it'll take about 30 minutes from start to on the table.

Ingredients

1 tsp olive oil

1 small red onion, finely chopped

1 garlic clove, minced

1 tsp smoked paprika

1 can (400g) haricot beans drained

350g passata

1 tbsp Worcester sauce (optional)

2 small chicken breasts, grilled and sliced





Method

Heat the oil in a non stick saucepan, add onion and fry until soft (3-4 mins).

Add the garlic, paprika and stir well.

Tip in the beans, passata and Worcester sauce (if using).

Season well and bring to a gentle simmer.

Cook for a further 5 minutes until sauce is thickened, stirring regularly so it doesn’t catch.

Serve any way you like but here are our favourites:

  • toast a wholemeal bagel thin and divide the beans between the two halves, topping with the grilled chicken with a salad on the side.

  • serve in a bowl and swap the chicken for crispy tofu (v), tempeh (v), seitan (v), mackerel or poached eggs and add a mixed salad.

  • serve over a small jacket sweet potato with a crispy cabbage and carrot salad on the side.

You can add some variety to this recipe by choosing different types of beans such as butter beans or use a can of mixed beans - it's up to you - make it your own!
