It's since become a staple in the True Food Nutrition kitchen as it's not only delicious but extremely quick and easy to make - this recipe from Cookidoo takes 10 minutes to prep, then into a food processor it all goes and voila!
This recipe serves 6 although by the time you've done the obligatory taste test several times, you might be a portion or two short!
Ingredients
300g broccoli florets
1 red bell pepper cut into pieces
1 apple, peeled, cored and quartered
30g pine nuts or sunflower seeds
25g olive oil
15g cider vinegar or white balsamic
1 tsp honey
1 1/2 tsp mustard
1 tsp fine sea salt
1/2 tsp ground black pepper

Put all of the ingredients into a food processor and pulse until you have the desired level of chunkiness.
We like ours quite finely chopped but experiment to find your perfect chunk!
Broccoli salad can be served with meat, fish, alongside some dips for a light lunch or supper or even to perk up a pitta or wrap.
